Need Dinner in a Hurry? I always do. I typically hate coming home to make dinner after work. But, the family has to eat, right?! So, when I know it’s going to be cold (like this whole week) I take a few minutes (seriously 5 minutes is longer than it takes) and I throw this yummy soup in the crock pot. The recipe itself was something I found a long time ago and I’ve altered it a little. I like the simplicity, and it takes good….my whole family will eat it (that’s not common). Easy Peasy! Here ya go with the Slow Cooker Vegetable Juice Soup:
Ingredients:
- 1 bottle of vegetable juice
- 3/4 large bag of frozen mixed vegetables
- 1/2 bag of frozen hash brown potatoes
- Slow Cooker Liner (Optional)
(I have easily doubled this. Also, if you like more liquid and less vegetables, add a second bottle of juice. The beauty of this recipe is it is simple and so customizable. I have even been known to add a pound of browned ground beef. )
- Put a Liner (optional) into your slow cooker
- Add all ingredients!
- Cook on Low for 8-10 hours.
- Enjoy!
I really do love this recipe. So very simple. So very yummy. Great on a cold day with some buttered bread.
Using the Liner makes the cleanup SUPER EASY AND FAST! You really can’t beat it.
So that’s it…within 5 minutes of prep you have a a great dinner for when you are ready to eat after a long day.
